Mint Zucchini…Easy Summertime Side!

Fortunately for you, I have an option that checks all those boxes!!

Read on to learn all the benefits of zucchini, as well as our family’s favorite way to have it, with step-by-step pictures!

 

 

Zucchini is so yummy, good for you, and versatile!

It is packed with many nutrients that support your health!

Zucchini is an excellent source of:

  • Vitamin C

  • Manganese

  • Vitamin A

  • Folate

  • Potassium

  • Copper

  • B6 (Pyridoxine)

  • Magnesium

  • Vitamin K

  • Antioxidants

  • Both Soluble and Insoluble Fiber

It can be used in many different ways!

  • Sliced and eaten raw with hummus or ranch

  • Spiraled into noodles for a pasta-like option

  • Diced and roasted with seasoning of your choice

  • And sauteed…the option I am sharing below!

 

 

Mint Zucchini!!

4 Simple Ingredients:

  • 2 Medium Zucchinis

  • 2 TBSP Chopped Fresh Mint (or 2 tsp dried)

  • 1 TBSP Olive Oil

  • 1/4 tsp Fine Sea Salt

Step 1:

  • Rinse off your zucchini and mint leaves and pat dry

  • Cut off the ends of your zucchini

  • Then cut your zucchini in half lengthwise

 

 

Step 2:

  • Slice into 1/4 inch wide half-circles

 

 

Step 3:

  • Pull the mint leaves off the stems

On a side note…

Can we pause for a moment to appreciate how gorgeous these mint leaves are?!

Even better is the natural aroma of mint floating off of them!

God’s Food is So Very Cool!!

I took a couple of the extra leaves and added them to my water. So refreshing!

 

 

Step 4:

  • Chop the mint

  • I tend to add a bit more mint than the recipe calls for. It doesn’t need to be exact.

  • If you do not have fresh mint, you can use dried.

  • 1 tsp dried equates to 1 TBSP fresh.

  • Preferably a bottled seasoning with the only ingredient being mint, no additives or preservatives.

  • McCormick Gourmet Organic line has a mint for $6.49 at Wegmans.

 

 

Step 5:

  • Heat your pan on medium heat.

  • Once heated, add the olive oil to the pan.

  • Then add the sliced zucchini.

  • Sauté for about 5-8 minutes, stirring frequently until the zucchini is soft and just starting to brown.

  • If the zucchini is releasing a lot of liquid, turn up the heat.

 

 

Step 6:

  • Add the mint and sea salt, then mix to combine.

  • Heat for 1 minute.

  • And that’s it…Enjoy!!

* As a note…salt causes the zucchini to release its liquid, which is why it gets added at the end.
